Chef Juan was quick to accommodate my request for a vegan version of their 8-course tasting menu, providing great explanations of the ingredients, sourcing, and local foods. I was delighted by the attention to detail, including checking on the use of bee pollen in one of the dishes. The staff were courteous and I highly recommend this restaurant, whether you are vegan or not. I wish I could give it a higher rating than 4/5 stars on HappyCow.

It is refreshing to experience these standards and talents in a country where international food guides such as Michelin San Pellegrino have not yet arrived. Definitely worth a visit if you're in Quito!
