When you call yourself Pho you, you expect either several pho variations or at least one pho that 's truly impressive. I understand that taste is subjective, but the soup I received from you had nothing to do with Vietnamese pho in my opinion. We ordered two portions. Both consisted largely of noodles, which, moreover, didn 't go well with pho. They weren 't even typical rice noodles. Flat, wide rice noodles would be best. The tofu seemed carelessly prepared; it wasn 't fried or heated sufficiently, but was apparently thrown into the broth at the very end and was even still cold in places. On top of that, the atmosphere in the dining area was terrible: several tables had empty, used plates and cutlery. From my ten years of experience in the restaurant business, I know that something like that can usually be taken care of in two minutes. You have a high-quality espresso machine, but the espresso was more of a weak brew than a properly extracted espresso. Please learn how to use it properly. I visited your restaurant several times because I truly love Pho and wanted to give you a chance. However, after these repeated experiences, I won 't be coming back.
