I visited Sib's during my vacation and had a pretty standard experience. The food was typical bar fare, but the service was a bit slow. I suggest setting aside ample time for your visit. The atmosphere was festive and lively, just as you'd expect from a bar.
My wife and I spent our first night in the US Virgin Islands at the Mafolie Hotel in St. Thomas. Unfortunately, their well-known restaurant was closed on the evening of our visit (Tuesday, December 26, 2023), so they directed us to Sib's, which is just a short uphill walk from the hotel. We began our meal with artichoke and spinach dip, followed by a Cobb salad for me and a chickpea stir fry for her. We also enjoyed a few drinks: a Lime in D' Coconut, a Bushwacker, and we shared a Kon-Tiki Sour. All the food was beautifully presented and delicious. The open-air dining area had an island vibe, while the menu leaned toward American cuisine (with the exception of the drinks). The restaurant was busy but not overcrowded. The service was friendly and laid-back, and we even had the opportunity to chat with the owner’s mother, who shared some insights about the restaurant's history with us. We can’t wait to visit Sib's again on our next trip to the US Virgin Islands!
We are visiting from Iowa and stayed near this restaurant. I ordered the half rack of ribs, and my husband had the chicken dinner. Both dishes were delicious! The prices were reasonable, and the food was excellent. We're planning to go back for breakfast in the morning. The staff was also very friendly.
I've been to Sibs a quite few times now, but today was not the day. I ordered a Grilled Chicken Sandwich with fries. Like all the time I've been there the fries are amazing. The grilled chicken sandwich wasn't up to par. It was undercooked like crazy. My grilled chicken sandwich had an uncooked crunch to it as I bit into. The bad thing about it is that I ordered the food to go. I'm not driving back there lol. I also had an order of the honey sriracha wings. Those were fantastic. It was a packed night and the service was good. The only thing I can trust from Sibs right now are some wings and fries
Came here for a weeknight dinner and had a pleasant time! Quaint location in the mountains with history on the island and a fun bar energy. Sib 's has good variety for types of meals and portion sizes we had the ribs and chicken tenders (4 per serving) as appetizers for the table and ordered meals too. I had the ahi tuna sandwich and the fish fillet was large and fresh (great value for the price). One reservation I had about it was that I asked for it to be cooked medium, and the whole middle came out raw I know charred tuna is usually raw and blackened on the outside, but since options for preparation level were offered, I assumed they were going to cook it. The chicken tenders were pretty small and the order came with 4, and were the same shape and coating as mozzarella sticks. The ribs were pretty good, and we got them with sweet potato fries which were excellent. They have a list of specials my husband got the Mac and cheese burger and found it ok, nothing exceptional and average price for the burger. I understand that many places operate on island time and you can 't expect service at the speed of state side, but our server was inattentive and only stopped by our table once to get our drink order and once to drop off a few dishes we had to wave down random servers to get water, appetizers and such. There is plenty of parking, with a dedicated lot for the restaurant! We didn 't need a reservation there was plenty of indoor bar seating and covered outdoor dining seating available. Overall a decent experience for a later dinner, but nothing exceptional and takes time.
