Decided to take my wife to a special meal for her birthday (belated). I’ve been trying to get her to stay at the Sebastian but she likes the big chain hotels. I know she likes tapas so I told her about a tapas restaurant in Vail. Once we walked into that hotel lobby she fell in love. Once we got to the restaurant she was already researching reservations. The ambiance was soothing with a hint of high end but not intimidating. The staff was so accommodating and kind. We love the folks of Colorado. The food was excellent and we ordered many plates with much anticipation for the next one. They were all great!!! The scallops were the best. This will be my regular spot every time i visit Vail and I plan to make it at least once a year. I congratulate them and wish them the best. I got top “best husband” points for that restaurant pick. Thank you so much for your food and great service.
The service, eating and ambiente were exceptional! we ordered the special for the evening, that was a lamb ravioli with a cream sauce, just incredibly good. the muddles were perfectly prepared. we shared several other dishes that were all delicious. we will definitely come back.
Although we arrived early for our reservation, Garrett, whom I initially thought was the manager, greeted us warmly instead of sending us away. He took the time to share insights about the hotel's art and history, which was a lovely touch. Once seated in a comfortable booth, Jeremy expertly guided us through the menu, highlighting notable and award-winning dishes. The highlight of the evening came when Jeremy revealed that Garrett is a Sommelier! He stopped by our table to ask about our preferences and suggested a fantastic Grenache that complemented our meal perfectly. We indulged in 6-7 share plates along with two desserts. My favorites included the pâté, rabbit pasta, and butternut salad, while the boys particularly enjoyed the lamb. The standout dish was the toffee pudding with candied bacon—an absolute must-try. It was served warm, but the ice cream melted quickly over it, creating a delightful balance. Overall, the food and hospitality were exemplary, and we can't wait to return for more wine recommendations and more small plates!
