There were multiple courses, each a unique creation that the chief does not plan on repeating in the future. It was fun to speculate what the next course was going to be like. There is a lot of experimentation going on but mostly the combinations worked well. Excellent value for such top end dining.

Even in Michelin starred restaurants around Toulouse, I have found nothing better than L’Intangible (I should, perhaps, add that I am judging the food part of the experience by what is offered to those with special dietary requirements). We first dined at L’Intangible soon after it opened 18 months ago. Since then, Antoine and Emma have perfected all elements of their restaurant. On this occasion, the mood was set by a surreal drive up the fog-bound, tree-lined avenue which leads to the château. Inside, the décor is a harmonious blend of ancient and modern and, combined with a warm welcome, we instantly felt that we had stepped inside a stylishly exclusive world. A succession of courses – up to six, depending on how you count them – offered a panoply of taste and texture, and aroma and colour. A beetroot tartlet with parmesan and chestnut, and a perfect little risotto made particularly strong impressions, and the dessert was an astonishing combination of three plates. All six members of our party were entranced by a fabulous evening. If you like fine dining, this is a restaurant that you absolutely must try at least once.
