Rossa (boss lady) seated us as quickly as she could, but the place was already about maxed out when we got there at about 5:30 PM. This town dines early! Waited about 15 minutes, and got a booth inside, which was good because it was a bit windy that evening. Out on the patio would have been nice under better conditions. We both ordered the same meal (verde burrito with a chicken enchilada). Took quite a while for the food to come out, but understandable given the size of the kitchen and the small amount of help. I felt the verde was a little watery, but it did have good flavor. The chicken enchilada was good, and the platter was really filled with refried beans and a good helping of rice. The chips and salsa were good too, btw, and Rossa and crew are very busy and very efficient. All in all, we liked Escobar's and will return when we're back in Kanab. By the way, they're closed on Tuesdays and Saturdays.

The service was efficient and friendly, and the food was delicious with generous portions. We ordered enchiladas, chili relleno, cheese quesadillas, super quesadillas, veggie burrito, shrimp fajitas, and veggie fajitas, and everything was tasty. Our table agreed that the food wasn't greasy or overly salty. The salsa was fresh and mild, perfect for the whole family. We were pleasantly surprised to find non-alcoholic Corona and Corona Light options, and they even served them in chilled glasses. Although the restaurant was small, the tables turned over quickly.

There was a decent waiting list but it only took around 25 minutes to get a table which was very reasonable. I got the Chile Relleno and my wife got a enchilada plate, this is everything you would want in those two dishes. They were authentic and packed with flavor. Our waitress was super friendly and treated everyone like they were dining at her home. We 100% will be back!
