During our road trip, we made a pit stop at this Brighton location (which was not listed) and indulged in two vegan breakfast sandwiches - the vegan Tequila Sun with Tofu-Bacon and the Tempeh Sausage with just cheese. Both were delicious, but we especially loved the Tofu One. The Diablo cream cheese was a standout.
