This is the best barbecue I've discovered in northwest Colorado so far. These guys really know how to smoke meat. The Pineapple Express is an instant classic—it's made up of tender smoked pork belly, a slice of smoked pineapple, and a generous portion of their pulled pork on a bun. The ribs were perfectly tender, retaining their shape while yielding ever so slightly with the slightest pressure. You can find them at events around Boulder or at the Rayback Collective, and you definitely won't regret it!

The J chicken was exactly how I remembered it from our trip to Jamaica. Absolutely amazing!

We fancy ourselves BBQ experts. Our qualifications are that my husband grew up in Kansas City and we have been smoking meats for about 15 years. We have yet to have discovered to notch BBQ in Colorado UNTIL TODAY! We ordered a sampling of items while at Cannonball Creek brewery. I am happy to report that the ribs and the brisket are AMAZING! I heard that Rollin Bones BBQ is at Cannonball about once a week (or so). We are definitely going to be return customers. Thank you Eric!

Fantastic BBQ and service! The sampler plate is the best choice. All the meats are incredible, and the sides are excellent as well.

If you see this truck, stop immediately and buy food from them. Even if you aren 't hungry. Get some anyway. I found myself at an event where this truck had been brought in to cater the food. Took a look at the menu and the special was a sandwich called The Pineapple Express , consisting of pulled pork, grilled pineapple and 2 chunks of grilled pork belly for good measure. Naturally, I ordered it. It didn 't disappoint. They asked if I wanted a side and I said mac and cheese, then they asked, anything else? , and I jokingly said, side of brisket . So they threw a pile of brisket on the plate as well. The mac and cheese and brisket were great, but the sandwich stole the show. I 'd order any of it again. They also had a vegetarian sausage option which was a nice, albeit unexpected touch especially coming from a bbq joint that seems to specialize in meat, (as most do I suppose). The people were super friendly and handled a relatively large and somewhat demanding crowd while maintaining notably positive attitudes. Crazy good sandwiches, sides of brisket, veggie sausages and super nice people...what else could you ask for? Again, don 't pass by this truck without stopping. You may not know what you 're missing. 5 stars.
