I first tried Rita's decades ago in Delaware and Pennsylvania. The fruit-infused Italian ice from the East Coast has slowly made its way to the West. While staying in Eagan, I had trouble finding vegan options. I was in the mood for something sweet and stumbled upon this newly built establishment.
