This restaurant is a hidden gem because the food is absolutely delicious. While it is not strictly a vegan restaurant, they do offer vegan options. When we arrived, a friendly server immediately came to our table and went over the menu with me, knowing that I am vegan and gluten-free based on the reservation we made. As a gluten-free diner, my options were slightly limited, but there were still two salads on the menu that could be made vegan. I opted for the field green salad without cheese, and it was surprisingly tasty. We also tried the pick-up container, which can be made vegan by omitting the poached eggs, and it was also delicious. The server recommended the mole poblano dish, which was the only vegan option on the menu, but it was so flavorful and unique. It consisted of blue masa tamale with mushrooms and black beans in a mole sauce, topped with plantain chips and amaranth seeds. While the fact that this is not a strictly vegan restaurant initially gave me pause, I am so glad I decided to give it a try. It turned out to be one of the best dining experiences I've ever had.

I opted for the field green salad without cheese, which was surprisingly delicious. We also ordered the pimple jar, which can be made vegan by omitting the guardians. The server recommended the mole Amarillo, which was the only vegan option available, but it was incredible. The dish consisted of blue mastamal with mushrooms, black beans, amarillo sauce, root veggies, and Amaranth. Despite the fact that this restaurant is not typically vegan-friendly, I'm so glad I gave it a try as it turned out to be one of the best dining experiences I've ever had.
This is probably the best dining experience in the state. It's truly a top-notch establishment!
