It was a great discovery, especially for their attention to food intolerances, with a vast menu that takes you from appetizer to dessert. I was particularly impressed by the quality of the ingredients, evident in the highly digestible dough and the lactose-free products used (especially for me, who have a fairly severe intolerance). I also really appreciated the fact that the dessert wasn 't the typical frozen brick from year X, but rather a fresh and light one. The only flaws are the somewhat high prices and the somewhat disorganized staff, with the annoying request of asking customers to get up after being served and move to a reserved table (with nothing marked on it and in a still half-empty room) after they made the mistake of not properly directing them to their seat... I would have preferred a gesture of courtesy. In any case, I would return.
As the Maestro says, his restaurant is an experience. I must say that everything is very carefully crafted and thoughtfully prepared. The ingredients are excellent, the service is courteous and attentive, and the pizza is truly excellent: fragrant, light, airy dough, and above all, truly digestible. I tried the Fiocco, even though it wouldn 't be my favorite choice due to the ingredients, but I must say it surprised me! I even ate it the next day with gusto, and was surprised at how good it was even cold! I absolutely recommend it. P.S. A special mention for the typical Neapolitan pasta frittata—it 's sublime!
We had a casual dinner in the area for work, at this place to see if pizza was really just empty words! But it turned out to be reality and professionalism! The vast and select menu is the key to professionalism! The impeccable staff make it an unbeatable recipe! See you next time

The menu has a whole vegan section, and everything we tried was absolutely delicious. many regional specificities. we were the only tourist there; it seems that the restaurant is very popular with locals. very nice, attentive staff. the chef himself came out of the kitchen to ask us how we liked everything. there is no English menu, so if they don't speak Italian I would recommend checking the menu before the time and searching words with google or a translator app. it seems that the desserts vary from what is listed on the menu, so they ask the personal for all vegan desserts.
It was an amazing experience (that is the right word! we were very friendly and as fan of pizzamakers roberto and salvatore susta took the time to chat with us and even served us our pizzas! we had a pizza-fiocco...(obvily and also a gluten-free, which was both incredibly delicious! the softness and fuffyness of the teigs was really something that I never tasted and even the crippiness did not lack; great recomendation when they are neapel!
Definitely the best Pizza I've ever had, probably the best in the world, it's quite obvious that this man Roberto Susta puts in a lot of effort and love to making that amazing pizza. Pizza Fiocco is just out of this world. If you ever...visit Italy you got to try this joint out.. Excellent wait staff and service as well.. 100% Biga... the flavour tells it all..
What an amazing experience at this Restaurant in Volla, Naples Italy ! Sustable La Tavola di Maestro Pizzaiolo Napoletano Roberto Susta ! My wife and I had an incredible experience! Starting with the appetizers and to His Signature Pizza Fiocco to his Margherita Pizza ...the best ever !!! The flavors, fragrance of each dish and Pizzas is an unbelievable awesome experience. I so strongly recommend to anyone, eat here, you will have a taste of Italy like no other ! We were in neapel of a visit to pompei and stopped at sustable for dinner. we had seen roberto sustra on youtube how to make biga pizza that is a method to make a long fermented dough. the selection of pizzeria toppings on...Sustable was very interesting and we had to ask our waitress on some recommendations. the menu is online so that the toppings can change with fresh vegetables throughout the season. we do not eat meat, so recommended it ambra, which has been reduced with yellow tomatoes and wobble in red wine for my wife. I had reduced pizza with slices of grilled thunfish, cannellini beans and the same swirling in red wine. all I can say is ‘Wow’! as they say, “soft and crispy at the same time”. the wee reduced tweeping was an absolute killer who hit our pizzas. my wife noticed that this was the best pizza she ever had, and we have pizza once the week home. even if they are in rom, if they are a pizza lover, a trip to sustable must be one.
