Let's begin with the cost. I paid 260 euros for one person. (If that shocks you, this is the wrong spot for you.)Having said that, what a place! There is a door to the street so you don't have to walk through the hotel lobby if you don't want to. I was greeted immediately by the sommelier, as it happened, and he guided me to my table. I had made reservations for a 6pm dining time on a Wednesday, but it wasn't necessary. The place was almost empty at 6pm but it had filled up by 7pm.I was a bit worried because I had found out that the chef had recently left and was replaced by his own sous chef, but there was truly nothing to worry about. The food adhered to a very high standard and was a delight to the eye and the tongue.I had the seven course degustation and every part of it was wonderful. One dish had a bit of cod, the main dish was veal. Two relatively minor parts gave me the greatest joy. First, when they served the bread, they offered two types of butter, a light-colored one and a dark, almost purple butter. The purple was chilled into little circles, very much resembling blueberries. Very tasty too!The second experience was something arranged for me by the sommelier. The wine pairings seemed quite expensive (I know what you're thinking - why stop now?) and I wasn't in the mood to drink alcohol, so I asked him about juice pairings. It seemed like he had already put some thought into it, because he had a separate juice menu, and I asked him to pair the five juice choices with the different meal courses. So that was what we did. They were actually juice and tea combinations in most cases. Thyme/lemon, spruce/darjeeling, etc. The spruce juice was especially interesting, having grown up in Canada surrounded by spruce trees and never once thinking "I'd sure like to squeeze some juice out of those needles."The whole production took more than 2.5 hours. I enjoyed it. At these types of super-expensive restaurants, you can sometimes leave hungry, because each portion is so petite and "barely there." But I was happily full. Maybe I filled up on juice, I don't know. The piece of veal was a decent size. The people around me seemed to be either on date night or in business meetings. One guy from Australia was also there by himself so we compared notes since he choose "Degustation 2" and I chose the first one. Everything was equally high quality. So again, don't expect "normal high prices" here. It's through the roof. But if that's workable for you, you should try it.
Food:Very good, clearly deserves the Michelin star. The style is very light and fresh, preparation perfect, contemporary but not artificial. Really excellent. Wines:Very nice selection, some lesser known wines, very good quality and matching the dishes well. Service: very friendly, not stiff, yet professional. What put me off were the prices. 129 for a 7 course menu is a lot, but adequate for what they deliver. 64 for 4 glasses of wine, that equals 16€ per glass. Clearly too much. However 11,20€ for a regular sized bottle of Evian is just unacceptable, a complete rip off, and left me with a bad aftertaste. Disappointing.
