We had the Tasting Menu (Menu Degustazione) on a Sunday evening. We had been spoiled with a non-stop sampling of eight starters, followed by three first courses, roast beef and dessert. You cannot miss it! La Primula Bianca is in Castellaro di Varzi, along the The Salt Road (La Via del Sale), a beautiful panoramic old pathway from Varzi to Portofino that goes back to the Middle Ages. Varzi is renowned for producing the best salami in Italy, and the hills around the small Castellaro village are also famous for wild mushrooms, in particular for the legendary ‘porcini’, and truffles, both abundantly present on the Tasting Menu. Foreign tourists who bump into this restaurant while trekking or biking along the Salt Road are indeed very lucky to have the opportunity to experience the best of an exquisite local culinary heritage at an extremely competitive price.
