I worked with Paolo almost 30 years ago, and he is still a master of the culinary arts. Everything he puts out is always made to perfection. I should have said ciao, but I was afraid he would remember all the rosemary potatoes I stole, or tiramisu I'd sneak. I'd work for him just to get fed! Just remember, taste before you try to season and parmesan does not go on everything.
