Needless to say about Pais Vasco, deserving to be the region leading in this field... But, nevertheless, Cantabria is something different. Leaving aside gorgeous nature and other favourable aspects of this region, would like to say that a real discovery of Cantabrian cuisine, stroke me one month ago, while visiting my favourite Suances, and that was due to Gastrobar Mode, situated in the very centre of the town. Everything was so perfect: a personal attention of jefe (chief), Francisco Sánchez-Vallejo, his delicious and creative, yet traditional dishes, an interesting wine selection. I did like the philosophy of Francisco that can be expressed in two words kilometro cero , which means that all the products are domestic, and moreover, from Cantabria itself. Great approach with great advantages for the clients... Creativity is the strongest quality of this place. Sometimes the dishes, especially, the pintxos on the bar counter, may seem strange, but the love they are prepared with is the true guarantee you 'll have a real pleasure. And mushrooms, of course... This is what Francisco tries to experiment with and one must assume jefe succeeded in this immensely! Don 't leave the place without trying his risotto with boletus or with truffles! I 'm sure something else, also extraordinary great and surprising, will appear in the menu of Gastrobar Mode very soon. I would characterise this Gastrobar Mode as an ideal mix of traditional Spanish cuisine with everything a real artist can make using his natural creativity and unlimited fantasy... One more and one of the strongest arguments in favour of visiting Suances.
