Fatty brisket was the best of all time. I admit that this was something waiting, but we'll be worth it.
Ya'll, I don't know what corkscrews have got to do with bbq......maybe I need bbq lessons. I'm definitely willing to return to find out (and return and return) because this play is the real deal!!! I'm not one to obsess over ambience unless there is something glaringly wrong. I like food that speaks for itself, but this place is so dang cute. For crying out loud they have Texas shaped pavers leading to their door!!! What more could you ask for? Aside from that the food was legitimately dreamy. I got brisket tacos that were to die for. You might be asking yourself who orders tacos at a bbq restaurant. This girl right here and I'd do it again and again. The brisket was so flavorful and their salsa has actual kick. They give you a side of bbq sauce and it's delicious too. Triple threat, my friends. They also get points for having flavored water (carbonated) on tap (think spindrift but on the fountain). The line does get very long at lunch, understandably but it moves quickly and the staff is friendly. I cannot wait to come back and try other things... if I can talk myself out of the tacos, that is.
Food here is amazing! Why are they asking for a tip without providing service. I had to edit this because at first i gave 3 stars for asking for tip without service but I watched the busser get a little girl a glass of water so that single act of kindness gets 5 stars.
Well today on my quest to bring you BBQ of Texas I traveled to Spring Texas to CorkScrew BBQ in old town Spring which is in TM go to spots I went with a old friend and Old Boss Curtis Fox me and Curtis did a lot of promotions together for Black Iguana Margaritas till unfortunately they went out of business do to the market being flooded with pouch drinks. But after many years we still continue to be friends he was and will always be a great mentor to me I learned so many great things from him and his family and he was there for me when I gave up my drinking and began my love for BBQ... For many of us we have to go threw trial and error to make us who we are and I'm just glad I have great friends to help me in my path in life, I met the guys of CorkScrew BBQ at the HouBBQ festival in my spice days and I only tried their BBQ once so it was a treat to go to their location and see what it was all about.. When pulling up at I could see that being in TM had done some good the line was out the door and around the corner and as I waited in line for my buddy to join me I over heard people talking about the place along with the other spots that made the list when you walk in the place is rustic and from what Curtis Fox was telling me that it was a old bar back in the days and that him and his wife would go there with the kids to sit in the patio area as the trains wised by and sure enough a large blast from a horn one began to pass by.... While in line I did notice some thing that no BBQ joints other the Killen's did as in line they asked if we wanted a drink and to me that brought customer service to a whole new level, I over looked the menu and Curtis suggested I order for the both of us and seeing that we were hungry I ordered up a Lb. of Brisket half lean/half fatty, 1/2 Lb. of Sausage, 1/2 Rack of pork Ribs and we both wanted to try the turkey with coleslaw and potato salad being our sides. First up was the Brisket and Curtis asked me what the difference in the flat and the point I pulled the flat and said this is the lean this part of the Brisket has little if no fat and if smoked to much it could dry out the meat I also told him that when doing competition this was the part most people turn in. The texture was good and the brisket pulled just right favor was good and the smoke ring was perfect, next was the point I explained to him that this part of the meat is the fatty end and when rendered right that fat would be turned in to jelly candy giving much favor to the meat and as I tried the point I could tell this was perfect with good smoke to it.... Ribs were up next and again I showed Curtis what to look for and explained that with the rib its all about the bite and I must say the Ribs here were really good the dry rub used did not over power the meat and I could very much taste the pork more then anything else I also had a small cup of BBQ sauce and dipped a piece to try and it did give the ribs a great flavor not that it needed it. the pork and meat jalapeno sausage was great and the casing had the right snap I was told that all sausage is made in house and that they dont use package sausage as most places do. at this time the guy that asked us if we wanted anything to drink came up and asked if everything was OK and that he would refill our drinks again customer service beyond what I expected. We tried the Turkey next and for me turkey is going to come out one of 2 ways dry or just right and this turkey was just right only thing I did notice is it had no smoke favor but other then that it was really good sides were also good and and to me this meal was up there with any of the other places I been too. I was really good catching up with a friend and enjoying the day, one thing BBQ does is it brings people together and I could see that in the place as it was way packed with the line still out the door. Pricing is by the Lb. and is as follows Prime Brisket $20 Lb., Pulled pork $16 Lb., Turkey $14 Lb. Sausage $14 Lb., Ribs 1/2 rack $14 and sides $2.50 If your ever in the Old town Spring Area go by CorkScrew BBQ and give them a try Thanks for Curtis Fox for lunch.... Smokin Willy T

I had such a great time at CorkScrew BBQ! The atmosphere is lively and the food is top-notch. The staff is incredibly friendly and provides excellent service. They checked on us multiple times to ensure we had everything we needed and made sure we were satisfied. The 1/2 lb brisket plate was absolutely delicious, probably the best I've ever had! I also loved the Jalapeño and Cheese sausage. The beans and potatoes were fantastic and the peach cobbler was to die for. It was a challenge to finish everything on my plate, but it was worth it! I highly recommend stopping by CorkScrew BBQ, you won't be disappointed!
I was thrilled to have the chance to dine at Corkscrew BBQ. The brisket was perfectly smoked, the pulled pork was exceptional, and the ribs were amazing. The staff was incredibly friendly and welcoming. I can't wait for my next visit to Corkscrew BBQ!
This restaurant has excellent food, great service, and is quick! The dishes are incredibly delicious, especially the classic BBQ options which are full of amazing flavors. The restaurant has a really cool aesthetic, but make sure to get there early to avoid a long wait. The brisket is fantastic, especially if you prefer cuts with more fat. The live bands are also amazing. The sausage is good, but it's standard. The mac and cheese is incredibly creamy and cheesy. The baked beans have a smoky and flavorful taste. However, the apple cobbler was disappointing. Overall, this restaurant is a must-visit!
Excellent mixed brisket, baked beans had a little kick, didn't get Mac n Cheese, sold out quick pull pork too. Cherry cobbler was pretty good, was hoping for peach. Highly recommend online order, just it don't have plates like menu. Must get order in b4 1PM
Get ready for some of the best BBQ you ever have! These guys do it right. If my parents had visited the east coast and thought I'd take her here. We ordered everything in the menu just to get a taste. Knifes are needed for nothing. You can tear the meat with a plastic fork, that says something. The Brisket is my favorite, followed by the Beef Rib (highly recommended) and then the Ribs. It's all really good. Without a doubt, go early ~45 60 min before opening to get a place in line. 1000% waiting.

Great BBQ! Expect to wait but it's worth it. I arrived at 1050 (opens at 11) made it to the front of the line to order around 1230 then my food came out a couple minutes later. Fantastic brisket, great bbq sauce flavor, potato salad was top notch and mac and cheese was creamy and tasty without being over the top. This is among the best BBQ in Texas. Perfectly seasoned meats, plenty of smoke flavor, delicious sides. The staff was incredibly friendly, helpful, and courteous. Can't wait to come back to Spring and try more from this fantastic place! This is the best barbecue I've ever had! From the excellent service to the amazing taste and generous portion sizes, we ordered a lot of food to share between 5 people. The brisket, turkey, sausage, Mac n cheese, Cole slaw, and potato salad were all absolutely delicious. The meats were so tender and the sides tasted homemade, which really made a difference. I enjoyed every aspect of this place and I can't wait to return next time I visit Houston!
This is by far the best brisket I have ever tasted. Despite having to wait in line for an hour, it was definitely worth it!
