As for the ramen, the portions are generous and the broth is flavorful, although I found the vegan broth a bit on the sweet side for my taste. I also noticed the addition of ginger, which is quite rare, and the egg was hard boiled and cold instead of having a molten center. If I return, I would likely try the tonkotsu ramen instead. What Jun M doesn't like about Nishiki Ramen-hillcrest:
Visiting from out of town and wasn't allowed to sit inside to wait for service. The place had 2 server, two-thirds of the tables were empty, and the kitchen was behind on their orders. The hostess said it tis their policy that we cannot sit down inside to wait. They asked us place ourselves on the list, it would be a 15 minutes wait outside. I ordered the Nishiki Ramen w/ Egg and had a pleasant aroma and taste to it. The soup was carefully prepared and well cooked. The manager of the store personally handed us the food and complimented us with a drink. I believe the managers name was Jesi and was really nice with the customers. Very professional.Food: 5/5
Akuma and spicy vegetarian are best.Service was a bit slow but we reached at an odd time, so that is expected
Hands down the best Ramen around town. There's nothing else to describe it. Every time we order from here whether it's delivery or dine-in the consistency is always there. Definitely will continue to come back.

For San Diego is was 62 degrees, though not freezing but chilly. However if we were to order drinks we could take a seat at the small bar with all six barstools empty. Needless to say with that kind of impression on service we decided to go to another more friendlier service oriented restaurant.Call before you go to ensure they are adequately staff.
Went to nishiki today (Memorial day) to have a good time with my friend and the ramen was as good as usual and steaming hot!! Delicious as usual! However, I could tell y'all were understaffed. There was only one server working today and I could tell he looked pretty tired. I think his name was jacky. Even so, he gave very good service and was always proactive in making sure we got everything we needed.
