For such a small this place does a very tasty hamburger. They're mostly limited to carry out during covid. I'm typically not a fan of fried potatoes instead of french fries but the garlic sauce on the hamburger pulled it together for me. I'll definitely have to try them again the next time I'm in Rico! Chef Eamonn O’Hara works his magic in the smallest kitchen imaginable, in this funky charming little jewel in Rico. Colorado. From the basket of bread perfectly roasted garlic to the Soy Ginger glazed organic Salmon and melt in your mouth filet, this is as good as it gets. Be patient, Eamonn does everything and his staff of one moves quickly, but on a busy night sit back and enjoy the bread and garlic while you wait for perfection. In the journey of life, you come across people who take an incredible amount of pride in their craft. Chef Eamonn O’Hara is one of them. My family and I dine at the Prospector at least three times a year, and it is an incredible experience each time. It starts with the garlic in oil with bread, followed by the corn bisque, chicken, beef filet and salmon. But, the chicken is my favorite. I have never tasted chicken so good. The wine and cocktail menu is very good, and the desserts are the perfecting ending to a great evening. The service is at a leisurely pace, so plan on about 2 1/2 to 3 hours. It’s an experience, and worth your time. I had a wonderful dining experience at this restaurant. Chef Eamonn is a talented gourmet chef who flawlessly executes each dish. The variety of choices on the menu ensures that every item is cooked to perfection. I would rate the food and service a 5 out of 5, and the atmosphere a 4 out of 5.
My husband and I decided to try this restaurant after reading great reviews. It was located in a small, secluded town which we enjoyed, as it was close to our camping site. Some of the dishes were delicious, while others were not as satisfying. We particularly enjoyed the corn chowder soup and bread with roasted garlic. However, I was disappointed with my steak, as I ordered it medium well but it came out well done and burnt on the edges. On the other hand, my husband's salmon was quite good. The waitress was friendly and provided good service, bringing the soup promptly. However, our main courses took nearly an hour to arrive. The ambiance was charming, but it could have been better given our expectations. Overall, our experience was mixed. We would rate the food a 3, service a 5, and atmosphere a 3. If you visit, we recommend trying the Whole Roasted Garlic-Flavored Olive Oil dish. Our meal cost between $50 and $100 per person.
