I can't say enough good things about L'Agave. I think they embody exactly why it's said that the French have the best food. Every morsel and bite of each dish is something worth savoring. I only did the 3 courses but perhaps next time I would opt for the tasting menu to really try out everything. What I had though was quite exceptional in itself. From the amuse-bouche, to the starter, the main, dessert and after, I thoroughly enjoyed each dish. Props to the chef for creating such great balances of flavors and textures, even with twists like adding insects to the dish such as they would do in Mexico or using jalapeños for some spice, or adding freshness with fruits like mango flavors or pears/apples. My favorite dish was definitely the dessert and I'd go back just for it! The textures and the flavors they managed to encompass in that dish was absolutely amazing. I could have that for days. On top of that the staff were excellent and so very kind. It did get a bit busy at the height of the dinner service but they dishes were spaced out evenly and brought out in great time. They accommodated me as a non-French speaking person and introduced each dish very well. I would definitely recommend to anyone to eat here, even with the limited menu because I think people need to experience this wonder! Hope to go back one day. The experience eating here makes me want to move to a France just so I can relive this experience more often.

It's the kind of restaurant that attracts you by is concept, but that over-delivers on the quality and overall experience. Friendly but not pretentious service, with expert advice on terms of wine and mezcal, of you feel experimental like I did.. Well-crafted plates. And then... Exceptional balance in terms of taste, while being daring in individual ingredients. I took the 75€ tasting menu, comprising 5 dishes, be each with multiple ingredients that were beautifully integrated (think grapefruit, fried pineapple, octopus, and homemade fermented spicy sauce, using either matcha or crickets). Each dish managed to surprise, challenge the mind a priori, but definitely convince the mouth. On my shortlist when I go back to Nantes!
