It was hot, light, fresh, and perfectly crispy—everything that makes me happy. When the crispy salmon skin maki arrived, I was delighted by the tightly rolled presentation. One sign of a great Japanese restaurant is the potency of the wasabi. The stronger it is, the better the food usually tastes. I dipped the tip of my chopstick into the paste and took a lick. In an instant, I felt a chilly rush as it hit my senses. Wow, that thrilling sensation never gets old for me!
