Nikkei offers a limited selection of vegan options, but they are quite tasty. I particularly enjoyed the vegan maki, truffled edamame, and Oldashi Tofu. They also provide complimentary potato chips while you wait for your food. I hope they will add more vegan options in the future or consider accommodating vegan requests. I love wasabi, so having a vegan maki option is fantastic!
