I think we tried most of... read more I came in last night with a group of chefs from out of town. Granted this makes a lot of chefs nervous, but we were wowed all evening! I think we tried most of the menu and it was all excellent. Best for me was the pork! I don't know where you source that, but I don't live there.....message me! Amy was a spectacular server, the cocktails fabulous. You can't go wrong here! Thanks all! Best food in Des Moines, period.

The Iowa ribeye was the very best that I have ever had. The char on the outside combined with the medium rare temp was absolutely perfect. The fried veggies, crisp green beans all the sauces that was magically drizzled along the side to dip. Heavenly!! The recommended cocktail was a wonderful drink to bring out all the flavors of each dish. We will definitely be back!

Now that I know what good food is sup... read more My first time at this restaurant was last weekend for the New Year's Eve 5 course dinner. Proof you have ruined one thing. Now that I know what good food is suppose to taste like, nothing compares now. That had to be one of the best meals I have ever eaten. It was so flavorful. We were there for two hours and did not feel rushed at all. Our server Jared was so patient, knowledgable, and a great conversationalist. We are not drinkers and he spent a bit of time with us figuring out the best drink and it did not disappoint. I would like to thank Proof for such a wonderful experience. You really showed my mother who came to Iowa to visit a really great time. We talked about it the rest of the night. I will be back.

In fact, one of the courses was in the top 3 of the best foods I’ve ever eaten, up with Nobu in New York and Roses Luxury in DC.And the service staff was amazing- attentive, knowledgeable, friendly, and approachable. If you want to spoil yourself, rundon’t walk.

The drinks and service are exquisite. We have been many times. We recently went for our anniversary and splurged with the chefs menuand an extra dessert! See the menu image to see what we had. The menu changes so it will likely be different when you go, buteverything has been delicious. I wish they would bring the beet and marshmallow salad back it was soooo good!
