Authentic Chinese Cuisine in Cuenca with tasty food. We tried the steamed pork dumplings and chicken spring rolls as appetizers and they were both quite good. We also tried the twice cooked pork and the egg fried rice and another special she had today which was made from pork belly and mustard leaves. These were all good. A good Chinese eatery with some degree of authenticity . The pictorial menu is a mixture of traditional Chinese foods, along with common chinese style American foods that often mistakenly called or misrepresented as chinese . Among the most common misrepresentations of Chinese cooking are: General Tso: an American invention. Battered and Deep Fried stuff is NOT authentic to (or method of) any of the regional cuisines of China. While Chinese cooking has sweet and sour profiles, so called “sweet and sour dishes (chicken or pork)” NOT authentic Chinese but are American invention. NOTE: pineapple (piña) has never been an ingredient in authentic Chinese cuisine. The good thing is this place is NOT the “chifa” so common in South America. This place seems to combine various Chinese cooking styles, Taiwanese and Hunan are what we detect from the dishes we tried . The Fried Dumplings are very flavorful. They are packed either goodness. Frying the dumplings is customary Taiwanese. The Brócoli and Button Mushrooms stir fry is quite flavorful. There’s a prominent umami flavor. BUT it is too watery for a stir fry, which should be almost dry! Button Mushrooms is common to modern Taiwanese cooking. The dish would have been even more flavorful IF black woodears or shittake were used instead. The dish of day is the Shredded Pork with Green Peppers (pimentos). It’s bursting with umami flavor with a slight chili heat the sauce is silken giving the flavor profile of Hunan cooking. Oh BTW, the hot chili oil is wonderful. Though we prefer a stronger heat, it is UNEXPECTEDLY MILD yet still able to lift up flavors and intensify the Umami tastes of the foods. This is a place worth revisiting to savor the other authentic Chinese dishes, BUT NOT THOSE CHINESE STYLE dishes. Service is very good. The place is gated ring the bell to enter. Excellent food! Generous spice profile. KungPao Shrimp had lots of fresh ginger. Amazing portions. Served hot. Trifecta. Service: Dine in Meal type: Lunch Price per person: $10–15 Food: 5 Service: 4 Atmosphere: 4
