Whenever I visit... read more I can hardly express how excited I was to see Guadalajara reopen. I have such wonderful memories of the original Guadalajara from my childhood. Whenever I visited Clovis, I would always ask to eat there. This week, during my three-day stay in Clovis, I treated myself to a meal at Guadalajara every single day! The staff was warm and welcoming, and the food evoked so many delicious memories. The homemade salsa and the unlimited chips were fantastic. My favorite dish was the ground beef enchiladas with red sauce. The guacamole was fresh and free of fillers like onions, tomatoes, and sour cream. And let’s not forget the grand finale—sopapillas drizzled with honey! They were absolutely delightful, hot, and fluffy. It seems this test kitchen is just the beginning of a fantastic new restaurant near Big Lots, which is set to open soon! I can't wait to return the next time I'm in town. A big thank you to Mike, Kirsty, the secret sopapilla maker in the kitchen, and the entire staff. We love Guadalajara!

The food was delicious and full of flavor. It's also more reasonably priced than other major chains, with significantly better quality at Guadalajara's. We will definitely be back! Here's hoping the food is just as amazing on our next visit!
