This was an amazing experience. While being in the courtyard of the small hotel was not what we intended, but its 2020 and you do what you have to. Heaters made the experience perfect, it was actually quaint and perfect. Food was beyond amazing, service was top notch, wine was spectacular and in the end it was exactly what you should expect from a restaurant of this caliber. The protein dishes were all-around poor (overcooked, uninteresting, etc), the service was weird and stilted, and the only exceptional dish, wagyu, was another 20% extra. I don 't get the around the world theme, since as far as I can tell we just stayed in Japan the whole time. It felt more like a wannabe Michelin-starred restaurant than an actual one. More abundant than you would expect from a tasting menu. In fact, most of the filling sample menu I have ever experienced. John the Sommelier offered a beautiful experience. One of the best meals of my life.
Last minute after a hike in the area was lucky to press for a tasting menu. Beautiful presentation delicious flavors. They made a Kohlrabi fatty succinni I could not forget (even if I write this review a few years after the meal).

Exceptional dinner. Each bite of our night's tasting menu danced between vibrant bursts of flavor and rich, gentle, sweeping, dishes that kept us excited for the next course. Good pacing. Kind professional service. Deserves at least a 2nd Michelin star, and on par food-wise with 3-star Michelin restaurants we've been to. Glad to have picked Aubergine to treat my mother for Mother's Day; she can't wait to come back!
What an absolute leak was to dinate at Aubergine! Amazing food and excellent wine pairs. I usually find it hard to get surprised by restaurants, but the chef was not disappointed. Aubergine is the perfect place to celebrate a special moment in your life. The staff was friendly and well maintained, but left us alone to enjoy our food and our conversation. It's not cheap, but it was worth it!!
