Person... read more At Casa Coloni the experimentation is combined with the flavors of tradition in a non-invasive way: is perhaps this why I try to go to every change menu! Personally on one side I can't wait to taste the untouchable, like the fake tomato and buffalo butter accompanied by the bread made with the acorn flour (I am dependent). On the other hand, I am always curious to see what the Chef Coppola invented between oxidation, fermentation and new combinations. All this in a magical place like Paestum where everything is treated in detail. If you are good forks like me, I recommend the tasting route. Actually we were lucky to be the... read more The charming ladies at the reception suggested to enjoy an aperitif outside in a lounge whilst waiting the restaurant to open. Actually we were lucky to be the first guests so we had the full attention of Michele and his team. Michele explained the history of this lovely hotel and then explained the qualities of their chef Luigi Coppola. Every course was accompanied by a little story from Michele; Aurelio, the sommelier, gave advice for the wines so that the entire dinner remains an experience to remember. The red wine Taurasi 2016 was the cream on the cake. The food was delicious and the service perfect nothing to add. We strongly recommend this restaurant and next time we shall certainly stay for a few nights. Franz and Anneke
