This is not Mexican food. Not even close. Not even a “Europeanized” version of it. It has absolutely nothing to do with Mexican food! Basmati rice?! Do you know Mexico is not in India? “Enchiladas” that are stuffed with carrots and cauliflower? Whyyyy… every Mexican would cry seeing this. And the spices… where is the cilantro, the cumin, the lime juice? It just tastes like “the average German person made a stir fry with whatever they had in their fridge and put it in a tortilla and thought that means it is Mexican now”
