A must go. A MUST!!!!! the food is just superb all along the years the pastas are delicate and light (all home made) the antipasti, crisp and fresh. The main courses (meats) are exquisite and different from the usual Tuscan dishes. the deserts are....wow1. We had lunch in this restaurant found by chance during a trip outside brings to the Amiata....what to say....you eat divinely! absolutely to try the polenta with chestnut flour, anime and fresh ricotta then their strong dish...... snowflakes....an explosion of flavors and at the same time a delicate goto....difficile to describe....The location is the typical Tuscan tavern of mountain.. . cozy and warm and the owner a particular character....a real host....who passionately describes you the menu..... There is a place of refreshment, on the mountain amiata the zauberberg of Tuscany where, if you go to lunch or to dinner, it can happen that at the table next to your is eating the dalai lama or (until he lived) michelangelo antonioni, laura morante or sergio stano, simone cristicchi or (until he lived) luigi veroni, that place is called “Aiuole”, a very welcoming inn. we have come to the flowerbed for three generations and we want to go home every time. the “Aiuole” rises halfway between the archdiocese (with its mighty aldobrandesca fortress and which gave birth to the prophet of the Amiata, gave lazzaretti) and santafiora (of Dante’s memory and who gave birth to father ernesto balducci). we are on the bigethan side of the Amiata and this, in the menu, you feel: appear in it, for example, the Maremma tortelli, the tagliatelle to the wild boar sauce. and again, among the first, are the snowflakes (as well as the white atmospheric miracle that gives them the name), the gnudes (palline of spinach and ricotta), the cutters to the truffle and sausage. great, chestnut polenta with ricotta and pork anime. before you can order very Tuscan appetizers such as black crostini, tasty amiatini meats, the lard of Siena. after, second dishes such as, to say, the tripe to montalcinese (with saffron), the sublime lamb squid, the pig in the brown oven, the rabbit with mountain herbs (well twenty-two, one more perfumed than the other), the chocolate boar, the fried capon. all accompanied by a great wine both white (of pitigliano) and red (montecucco). for dessert, you will be offered milk to Portuguese, baked cream, Catalan cream, but also the famous St. Saviour's Abbey (also historical amytina resort, located in the Sienese side). It seems that this is a place where it is worth going as often as possible. but the “Aiuole” has an additional attraction that is the couple that manages the inn: Hugo and lionella, husband and wife, two people with undescribable skill and goodness. and seemingly scorbutic (but it is all a fake he, who knows everything about the Amiata and its mystical and rebellious prophet. sweet but of an infinite moral force she, of original big-years but now become (thanks to the Dalai lama) "cuoca zen". we returned recently, after long absence due to covid, and in addition to everything described above, lionella had prepared lasagne to say little sublimation, with a leaf that melted in the mouth. an experience that is worth doing and that we will definitely continue to do.
