They had more bite than regular soba, which added to their deliciousness. The coarse-ground soba, which can also be eaten with coarse salt, had even more bite. The medium-ground soba had more moisture than the coarse-ground soba, but it was still firmer than regular soba. The interior of the restaurant, renovated from a traditional Japanese house, has jazz music playing and stylish furniture. I highly recommend this restaurant when you visit the town center of Hiraizumi.
I was surprised to find such a wonderful soba restaurant nearby, where jazz music plays through BOSE speakers. I tried the seiro soba and it was delicious. Next time, I would love to try the classic soba, zenzai, and desserts. The owner prepares everything alone, so it may take some time. It's recommended to go early before they sell out. They grind and make soba from organic, pesticide-free buckwheat using a stone mill.
I lined up 15 minutes before the opening, but there were about eight people ahead of me. Upon entering, I was greeted by jazz music, creating a very pleasant atmosphere. Unfortunately, I came by car today, so I couldn't try the soba rice porridge. I ordered soba rice, classic soba, seiro soba, and soba fujari. The soba rice was coarsely ground, giving it a fresh, green appearance similar to new soba rice. The classic soba was also coarsely ground and limited to ten servings per day. It was truly fragrant and delicious. The soba fujari was a smooth soba rice pudding-like dessert. It's a sophisticated dish for adults. Next time, I plan to use the train and taxi so I can enjoy the entire soba experience from the beginning.
