Eggs Benedict Recipe

Step 1: Fill the bottom of a double boiler with water, making sure it doesn't touch the top pan. Bring water to a simmer. In the top pan, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and water. Slowly add melted butter while whisking constantly. If the sauce gets too thick, add some hot water. Whisk in salt and remove from heat, keeping warm with a lid.

Step 2: Preheat the oven on broiler setting. Fill a saucepan with water and vinegar, then poach eggs for 2 1/2 to 3 minutes. Remove with a slotted spoon and set aside. Brown bacon in a skillet and toast English muffins under the broiler.

Step 3: Spread butter on the muffins and top with bacon and a poached egg. Place 2 muffins on each plate and drizzle with hollandaise sauce. Sprinkle with chopped chives and serve immediately. That should keep the kid quiet for a bit.
