Out of all of the vegetarian Indian dishes I tried on Allrecipes, this has been by far my favourite! I love the texture of the eggplant mixed with the curry and tomato.

WOW definitely going on our meal rotation! This recipe blew me away!! We like to leave the eggplant skins on because it's healthier (and tastier in our opinion) so we just had to cook them a lit
