Baluarte is a Michelen Restaurant located in the old town of Soria, the main city in the homonymous province, in Castilla y León Region, in the center of Spain.... read more Baluarte is a Michelen Restaurant located in the old town of Soria, the main city in the homonymous province, in Castilla y León Region, in the center of Spain. The restaurant is very comfortable, and it is very well decorated. Also, the staff was very friendly with us and he recommended us a very good wine and we could talk about some aspects of local gastronomy like truffle. Very interesting. We come here to taste a gastronomical menu for dinner, which has a lot of local dishes like traditional pickle, carrot and pumpkin juice, deer tartare, beans, fish of Ucero River, gazpacho, organic leek with cod, duck lasagna, honey with local cheese and peach. All of them were very good, specially the pickle, deer tartare, fish of the Ucero River and leek with cod. Really, a very interesting restaurant to taste local (great! gastronomy. An absolutely first... read more We recently visited the attractive city of Soria for two days, and decided to try the lunch time degustation menu at Baluarte, for 69 euros. An absolutely first class meal followed, well-thought out, carefully presented, and served, neither too quickly nor too slowly, by polite, skilled, multi-lingual staff. [Later we also met the chef, who certainly is a master of his trade. For us this meal was an exceptional thing, but a great experience, and one to recommend highly.
