We spent a weekend skiing... read more Conveniently located right next to the ski slopes, this restaurant won us over with its authentic, local, and truly delicious cuisine. We spent a weekend skiing in Flims, and we enjoyed the food at Restaurant Capalari so much that we ended up having lunch there both days. The restaurant is easily accessible on skis, as it sits right by the slopes. Inside, the atmosphere is spacious and bright thanks to the large floor-to-ceiling windows, which offer beautiful views of the mountains. There are several large tables designed to accommodate multiple groups at the same time. Outside, the restaurant also features a terrace. The menu is not particularly extensive and mainly consists of specialties from the Grisons region, along with a few other Swiss classics. On the first day, we tried the barley soup and the capuns. The barley soup had a deep, rich flavor of vegetables and Grisons air-dried meat, lifted by fresh notes of chives and a creamy, velvety texture thanks to the cream. The capuns were served with a cheese sauce that was intense and full of flavor, pairing beautifully with the aromatic, herbal taste of Swiss chard and the umami depth of the cured meat. They were undoubtedly the best capuns I have ever tasted—perfectly prepared, comforting, and deeply satisfying. The following day, we ordered the beef tartare, carrot salad, fondue ravioli, and pizokels. The tartare was simply outstanding. The meat was cut to perfection and had an excellent, clean flavor. It was accompanied by an egg yolk and a black garlic emulsion, which added creaminess and enhanced the meat’s depth of flavor. The fondue ravioli (a house recommendation) struck me as a wonderfully original way to reinterpret a Swiss classic in pasta form. The ravioli were perfectly al dente, and the filling was meltingly soft—an indulgent burst of flavor in every bite. As for the pizokels, they were equally excellent, served with a creamy cheese sauce and topped with more gratinated cheese. Once again, a hearty and robust dish—authentic mountain cuisine, traditional, full of character, and executed with great skill. We would have loved to try the desserts, but the portions are so generous and substantial that we simply had no room left. We will certainly do so on our next visit. The service was very friendly and efficient. The waiting time was short, allowing us to make the most of our time back on the slopes. In summary, Restaurant Capalari offers authentic, carefully prepared cuisine where you can enjoy delicious and well-executed Grisons specialties. Highly recommended for anyone wishing to discover the local cuisine of the region.

It seldom that my son on his own accord exclaims that a pasta with tomato is good…but this one was good enough to get that acclaim. Staff is very friendly and fast. Highly recommend.
