Chef David Pratt is just beginning to bring out his new Spring menu. My husband has been begging Chef to bring back a steak and he has! It is grass fed and dry aged 42 days so it is the most tender and flavorful steak we have had in a very long time. I just do not know how he gets it so perfectly medium rare throughout and this was not sous vide. It is done on his wood grill. The potato almost like pancake was the perfect side he prepared with the steak along with the just picked vegetables. Cannot wait to make our way through the rest of the new items!
