You will be welcomed by a kind and discreet staff who is composed like few others. sometimes it happens in the city 's clubs... and so far so good you can breathe a sigh of relief. Yes, because when you are from Puglia and you bring someone to eat Puglia you always hope not to make a bad impression as if you had invited them to your home. But now I want to put parochialism to rest, I don 't want to be biased, I want to let the promoter of food and wine itineraries make a judgment... guys, I 'll just tell you that when the friggitelli that I had ordered as a starter arrived, I felt like getting up and to see if mum wasn 't hiding in the kitchen to surprise me, beautiful meaty, charred as they should be, cooked with coarse salt which must still arrive in crystals at the table so that by breaking them under your teeth you can smell the aroma of the sea. Then we tasted the octopus trio and obviously it was an escalation, for me the one in the pignata feared no comparison, this is a dish that is only apparently simple because the sauce cannot be lengthened with puree without respect for the octopus which would otherwise be feels bullied. Then I couldn 't resist the ciciri and tria with cod, the fried pasta took me back to my grandmother 's house, the balance of this dish was superlative and here too making the cod taste good without covering everything else wasn 't easy. For my diner, cod au gratin with caramelized onion and a side dish of courgettes, this dish convinces even those who don 't desperately love cod like me. In short, by now I had returned to my childhood, I could only finish with a spumone: what a delight! Fragrant and sweet in the exact measure. At the exit I set a trap, how long have you been open? Six years . I almost felt like crying because in my disbelief I had assumed they had only opened for a short time and I was about to make a mental note come back in six months to see if the quality has dropped , but no six years... so they are working at capacity this is their standard . May God bless you guys, I will never give up on you, truly the beauty of Puglia even in Rome.
