I went with folks that have been coming to the area for 28 years and know where to get the best of Yucatan food no matter what the place looks like. La Balsa's specialty is Conch Ceviche and it is fantastic. It's my understanding that conch may be legally harvested only from Sept to May so if you are not in Progreso at that time it may not be avalible. A regional beer, try Leon Negra, with the complementary tapas, and an order of Conch Ceviche is plenty for two at lunch. If you order two beers you get double the tapas. All this, with the Conch is about $5. Be brave.
