Love for the land, love for the raw materials, which are enhanced in every way (we drank a cocktail with onion extract that was a revelation), love for culinary art and technique, and love for his guests. We had the pleasure of tasting so many different dishes, combining tradition and innovation, transforming a simple onion into a masterpiece, bringing chitarra with crayfish to the table with a sauce that is truly a distillation of flavors, blending earthy roots with freshwater flavors. All this was topped off by Eugenia 's kindness and warmth, which made us feel welcomed and at home in a minimalist yet meticulously maintained setting.
