Having sampled cheesesteaks from across the country, including Philadelphia itself, I appreciate the variations on this classic, but I tend to prefer the traditional version. In my view, if a philly cheese steak is not made in the traditional way, it should be labeled as "Philly-Style" Cheese Steak. I base this stance on my research into the traditional Cuban Sandwich. Despite this restaurant's take being a decent sandwich, their menu does not include the "real" Philly Cheese Steak. That would ideally feature deli roast beef, ribeye, or sometimes top round steak grilled and chopped in virgin olive oil, topped with melted provolone cheese, optional toppings like peppers, grilled onions, mayo, mushrooms, and perhaps some hot sauce, along with salt and pepper. Bon appétit!
