overall it was not the meat experience I wanted; I had a bark carpaccio for the escape. the taste of the vinegar salsa was exaggerated. as for the big piece of meat, a great disappointment. we have not made the same definition of good, the flesh. somewhat reddish. then, I felt it was missing seasonal. it was only bland meat, so that I potted to the small sauce (which, except aioli tended to grab edgy) I found comfort...
