I ordered the fried hito, which is a classic dish here, and I was pleasantly surprised by the ginata version; it tasted remarkably similar to the famous Alavar sauce from Zamboanga, even matching its color. I couldn’t get enough of either dish! I also tried the kinilaw and tuna tinola. My friend said the kinilaw was the best she’s ever had, although I found the tuna to be a bit tough and there weren’t many pieces. I’d probably skip that next time. Overall, a great experience!
