Maximo Gimenez, a Stanford-educated teacher, befriended American troops stationed in Quezon City, Philippines post-World War II. What started as soldiers coming over for drinks turned into a cafe serving delicious chicken, steak, and drinks. Maximo's wife, Mercedes, his sister-in-law, Felipe, and niece Ruby all joined to help run the cafe. Ruby, with her husband Claro, created a special chicken recipe that became so popular, even the Filipino public loved it. Encouraged by her mother, Ruby expanded the menu to include more Filipino dishes and opened a restaurant named "Max's" in the Baclaran district of Paranaque along Roxas Boulevard.

Parking is NOT free ($2.50) I'm giving this restaurant four stars for the Kare-Kare (K2) with the chicken adobo.

Came from the east coast to visit family. It is a fun place for a get together. The wait staff was very attentive to our dietary needs and so very friendly and nice. The food was great although I wouldn’t consider it “healthy.” It was the first time trying Ube ice cream and it was AMAZING! Will definitely go back next visit.

The food wasn't bad. Only that our server forgot to put in an order- crispy pata.. something that was discussed with him and he even gave a suggestion on what size we should get. He brought in the rest of the order sans the pata. When asked he said it's coming up. Then he came back and said it'll be another 15 minutes. Meanwhile, we're digging in because we were starving. Another 10 minutes later, we're all almost done to the point of asking them to just cancel it- he brings it in. When we cut it apart, it was cold to the touch in the middle. It was so so disappointing.
