The base of the Spudbar bowls consists either of regular boiled potatoes or sweet potatoes, which are cut with scissors and mashed slightly. On top, you can choose from various toppings and salads. Each Spudbar bowl is definitely enough to satisfy two people—trust me on that! 1) Moroccan Chickpea and Kale: This vegetarian option is incredibly delicious and absolutely worth a try. It features warm Moroccan chickpeas, a kale mix with delightful wild rocket, a quinoa grain mix, along with beetroot, hummus, and spring onions. All these ingredients complement each other perfectly. If you're looking for some heat, you can add jalapeños like I did. I enjoyed this with regular potatoes. 2) Chilli Bean and Salsa: Another fantastic combination that pairs perfectly with sweet potatoes. The spicy tomato salsa combined with the sweetness of the potato created a delightful tangy flavor. The bowl also included mild chili beans, corn, cheddar cheese, shredded cabbage, sour cream, and was topped with chips, making it reminiscent of nachos. Absolutely delicious! 3) Mexican Chicken: This was one of the simpler options we tried. It featured free-range chicken, mild chili beans, wild rocket, carrots, corn, and jalapeño mayonnaise. Personally, this one didn't impress me as much, but tastes vary from person to person. Overall, it was a wonderful experience that reminded me of Subway in the way you get to choose your ingredients. However, I've never had anything quite like this that was both healthy and filling. Definitely worth a visit!
