After 10 weeks in Japan and over 50 bowls of ramen, he abura soba at tonikaku remains one of my favorites, beaten only by the Michelin Guide rated Tsuta. Stir, taste, and adjust. The noodles are dense and satisfying, and the addition of vinegar and oil gives them an irresistible tang.
