Offishina and Danilo 's Osteria: A Journey Through Taste Danilo, an acquaintance born outside of the restaurant business, welcomed me, my husband, and friends to his Osteria. It 's not just a lunch, it 's a true regeneration. The heart of the experience is the Offishina fish cured meats, Danilo 's unique creations that offer simply incredible and unexplored taste experiences. The wine selection is perfect, completing an atmosphere where passion and love permeate every detail. Behind all this are irreplaceable pillars: Maria Teresa and Carmelo, unparalleled in hospitality, and the mainstays Valerio and Pamela. Between the dishes cooked and presented with obsessive care, the passion of this close-knit family, and the Offishina products—the true food of the future—a piece of my heart has remained.
We just returned from a lovely evening at this restaurant. After dinner, we went on a culinary journey because the owner, Danilo, was super kind and, above all, very knowledgeable in explaining all the dishes and, especially, all the ingredients. Not being your typical seafood restaurant, Danilo explores new dishes, blending tradition and innovation beautifully, in our opinion. A blend of local and even international ingredients. We appreciate and value these types of cuisine, and especially people who have the courage to dare. There's nothing to complain about the food. The same goes for the service (even though the other waitress didn't know the specials of the day—but I think it's a temporary substitution). The flaw? The location. The restaurant's location doesn't pay off. If it were by the sea or in a city like Gallipoli, it would be 10 points more, but most likely also 10 euros more per dish. Very affordable, the quality is more than excellent.
Originality in the dishes, refinement without ever losing sight of the star of the dish: the fish. And what fish! Quality raw materials, attention to pairings and allergens, zero preservatives, combinations that leave you speechless. And then shall we talk about Danilo? The chef-owner, a true fish craftsman, a visionary who has found a way to preserve, distill, ferment, and always maintain the purity of flavor. A force of nature! If you're in Puglia, head to Matino and I'm sure you'll leave wanting to return soon because this delightful restaurant makes you feel welcome and leaves you in a good mood. Thank you, Danilo and all his staff.
