This fantastic Mexican food truck, with a unique twist, is usually parked in Maple Falls, WA. If you want to stay hungry go ahead and buy a burrito with some meat that you can only smell, not taste! As they give you a small baby burrito with lots of rice not other ingredients.. not avocado or tomato while they charge extra for salsa that was just a spoon of sauce … do not waste your money! If they pay $12 for a veggie dish (which is not big at a first place, it is a box that could keep half a pound most) she gave me the half of this box can be 7 ounces of “veggie bowl” rice and drilling with cauliflower, gurke, feta. we asked if they had tomorrow or avocados. they said no, but they add additional $1 for salsa, which is a small small small 15 gr sauce, called salsa. and most of this veggie dish was rice! for a total of $13! stay hungry! no taste of mexican only brown rice and a spoon of cauliflower!

Always consistently delicious. fantastic salsas. they even have a small fire pit to gather while waiting for their molecular nachos with verde salsa.
Kreatiw and tasty. a highest stop for postberg fuel. also her Mexican hot chocolate is so good!

Stopped on our way down from the mountain. What a pleasant surprise to find this food truck offering some yummy vegetarian options. We had blackened tofu tacos, a veggie southwest bowl, and the apple burrito dessert. Took our food down the road to Silver Lake Park and enjoyed our meal lakeside followed by a fun walk. Lovely end to our day.
I live in the area and decided to try out Monolo. My fiancé and I ordered two chicken burritos and they were absolutely disgusting. The chicken that was served in the burrito was ground chicken, which was gritty and flavorless. There were no sauces or veggies on the burrito (lettuce, cabbage, tomato, onion, or avocado). I was extremely disappointed as our food choices in the area are limited. We had to throw away both burritos as they were bland and the meat was the lowest quality you could find.
We were coming down the mountain and were really hungry we'd never heard of these folks but we love good Mexican!! And believe me, this is GOOD!! We had the chicken mole burrito, it had the perfect balance of mild heat and a little sweet the black beans and red rice made it even better full of flavor and texture!! We were really impressed and happy!!! The price was perfect and the size was great!!!
This place is a great option right now. They're a little food truck in maple falls so it's easy to order and safely social distance while you wait. They're really nice with decent prices and quick turnaround. Thank you Manolo. I wouldn't say no to a bit more spice or some guacamole. But all in all, I'm really glad these guys came along when they did.
Monolo is my favorite place to eat! I will never miss an opportunity to support that business and family. The food is always so delicious and fresh and every item on the menu is worth trying. I love that there's quick and wholesome food on the Mt Baker Highway. Eat at Monolo and you won't be disappointed.

The food at this restaurant is always consistently delicious. The salsas are fantastic. They even have a small bonfire pit where you can gather around while waiting for your Mole Nachos with Verde Salsa.

The green salsa is fantastic and the mother/son team is amazing. They offer plenty of vegetarian and vegan options that are healthy and affordable. We have loved everything we have tried here, from the sweet potato tacos to the chicken and beef tacos to the burritos. Everything is delicious and never greasy. We can't wait to try the other items on the menu, especially the seasonal soups. We hope they continue to come to Maple Falls!
