I was worried that I wouldn't find a vegan option in the airport but I was lucky enough to find Pimai restaurant. Named after his son the owner makes the food and is totally aware of vegetarian food. Just make sure to specify vegan requirements. They have a vegetarian/vegan menu on display so you can't go wrong. Food was delicious and the price was really fair especially being in an airport.
