Japanese) elements, techniques and flavors. Starters are well seasoned, truly appetizing. The sweetbread is perfectly cooked, rich but well-balanced by the sauces. The pigeon is very tender and tasty, well paired with maitake and coffee beurre rouge. The dessert and pastries are delightful and make us feel very pampered.
