My partner and I stumbled upon Ruby Sunshine during a week-long visit to Knoxville, and we were immediately captivated. We ended up dining there three times in just seven days! The Fried Green Tomato Benedict is absolutely phenomenal—it's likely my favorite dish from our entire trip (which is quite a statement considering the fantastic restaurants in Knoxville). On the sweeter side, the French Toast Bites and Seasonal Beignets are also outstanding.

We tried the bayou shrimp Benedict and the sweet spicy chicken with French toast bites, and both dishes were outstanding. The service matched the quality of the food! Our server consistently refilled our drinks and provided the perfect level of attention. I highly recommend this place for brunch or lunch!
