You can find the menu on the website or ask for one there. The restaurant atmosphere is very nice and spacious...tables aren't cramped. They also have outdoor seating. Great service, great atmosphere, great menu, great food...All good things!! ???????? ???? We got the breakfast tacos, avocado toast, banana French toast (bread was a little tough- i think the brioche French toast would've been better) and some benet things with strawberries- which was DELICIOUS! My partner and I stumbled upon Ruby Sunshine during a week-long visit to Knoxville, and we were immediately captivated. We ended up dining there three times in just seven days! The Fried Green Tomato Benedict is absolutely phenomenal—it's likely my favorite dish from our entire trip (which is quite a statement considering the fantastic restaurants in Knoxville). On the sweeter side, the French Toast Bites and Seasonal Beignets are also outstanding.

However, the French toast was barely covered with egg, so it was more just toast. Service seemed to be struggling with the brunch rush even though it wasa normal Sunday morning, so we waited longer than we should have for food, to order, for silverware, etc. We also ordered baconwell done that didn't come well done. I'd come back if others wanted to, but probably won't return on my own!

The staff and service was exceptional, even though they are having staffingproblems like everywhere else. I had the Florentine Omelet and substituted Chicken Sausage for the mushroom. It wasdelicious! The sides were very fresh tomatoes and just right ripe avacado...not a single brown spot. I highly recommend RubySunshine and will be going back and telling friends.
