I recently visited a food truck, and I can't shake off my concerns about food safety. While I was there, I noticed a woman who seemed to be related to the cook—perhaps his wife. Regardless, she was sweating, and I saw the cook affectionately wipe her forehead and hair with his hand. While that gesture might seem sweet, he then turned around and continued preparing food for other customers. I had already started my meal before witnessing this, and I can only hope his hands were clean. The food was tasty, but as someone in the medical field, I can't overlook hygiene practices. With so many cases of hepatitis A out there, I won't be returning to a place that doesn't prioritize cleanliness above all else.

Without a doubt, this is the best BBQ in Killeen. I've never been a fan of spare ribs, but they somehow made them so tender that the meat falls off the bone. The sausage is incredible too. But I think the BBQ sauce is what truly elevates everything. I initially thought they had closed down, but they’ve just moved from Stan Schleuter to the corner of W.S. Young and Rancier. Just a heads-up!

I highly recommend this BBQ restaurant; it's exceptional! I absolutely love the brisket and the potato salad.

There are too many cases of hepatitis A out there.
